Zucchini Slice

Serves 4

Description

This slice is a great way to get your kids to eat veggies!

Ingredients

2 medium zucchini grated
1 carrot peeled and grated
1/4 cup corn kernels
1 onion grated
1/2 cup low fat milk
1/2 cup self raising flour
100g grated tasty cheese
1 tablespoon olive oil
5 free range eggs beaten
salt and pepper to taste
*Optional- add 2 slices of ham diced

Instructions

1. Heat the oven to 180 degrees
2. Line a 25cm x 30cm baking tray with baking paper
3. Squeeze the excess moisture from the grated zucchini and add to a large bowl
4. Add the carrot, corn, onion, milk, flour, oil, cheese and eggs and mix until combined
5. Season with salt and pepper
6. Pour into the baking tray and bake for 25-30 minutes or until cooked through
7. Cut into slices and serve with a salad
