White Buns

Serves 35

Ingredients

1 cup margarine, softened
3 tbsp. salt
3 eggs
3 tbsp. sugar
9 cups warm water
3 tbsp. fast rising yeast
10-12 cups unbleached, all purpose white flour

Instructions

Mix first five ingredients, whisking thoroughly.
Stir yeast into 4 cups flour and add to mixture.
Stir in remaining flour and knead with hands until dough is firm.
If it's still sticky, then add more flour, 1/4 cup at a time, until firm.
Let rise for two hours, or double in bulk.
Shape buns and place in well greased pans.
Let rise again for about 1 3/4 hours.
Bake at 450 degrees fahrenheit for 12 minutes.

Notes

This is a large batch, so sometimes (when it's still in the runny stage) I'll pour 1/2 in a separate bowl and add ground flax, molasses, honey, bran, and whole wheat flour to make super delicious whole wheat buns.
It's also great dough for making cinnamon rolls. Instead of forming it into buns, roll out, spread with softened margarine, brown sugar and cinnamon. Roll up, slice, and place in 9"x13" pans to rise. For ultra gooey cinnamon rolls, mix together 2 cups brown sugar and 2 cups whipping cream and pour into pans, then place rolls on top, and let rise till doubled.
