This is a gem of a side!! It is really simple but so tasty and great texture combo.
Ingredients
1/2 kent pumpkin (or any pumpkin you prefer), chopped roughly with skin left on 1 Tbs olive oil Salt and pepper to taste 1/4 cup of pepitas roasted (pumpkin seeds) 1 cup of hummus
Instructions
Pre-heat oven to 200C. Place pumkin pieces in an oven tray and drizzle with olive oil. Bake for 30 - 40 minutes until roasted to your liking. Roast pepitas in a small frying pan until golden brown. Remove from oven and place on serving platter. Drizzle hummus over all of the pumpkin and then sprinkle with the roasted pepitas and serve.
