My take on a classic jambalaya using just meat.
Ingredients
Approx 7/8 tbsp olive oil 1 Onion chopped mixed peppers chopped 4 cloves garlic crushed 1 whole chorizo sausage chopped 4 medium chicken breasts 1 red hot chilli pepper 1 yellow hot chilli pepper 300 grms American long grain rice (easy cook) 1 tsp chilli powder or flakes 2tbsp turmeric 2 tbsp cajun spices 1 pint chicken stock approx 500grams mixed veg, carrots,peas,courgettes,leeks all chopped salt and pepper to taste
Instructions
1. Heat the olive oil in a large skillet/pan with a lid, add the onion and mixed peppers garlic, chorizo, chicken breasts and cook for about 10 minutes. 2. Add the chilli peppers. 3. Add the rice and stir well, add the chilli powder/flakes,turmeric and Cajun spices, mix well so the rice is well coated with the flavours. 4. Add the chicken stock and bring to a simmer. 5. Add the mixed vegetables and bring to the boil, then turn down heat to simmer. 6. Simmer for approx 45 to 60minutes, tasting for seasoning add salt and fresh ground black pepper and more spices to suit your own personal taste. 7. Serve..

Forgot to mention .. keep some chicken stock aside for topping up if the rice sbsorbs a lot..
