Easy salad to make ahead, keeps well in fridge. Similar to a bean salad KFC used to make. Use beans of your choice.
Ingredients
Dressing 1/2 cup sugar 1/2 cup white wine vinegar ( or half wine vinegar and half Spanish sherry vinegar) 1/2 salad oil 1 teaspoon salt 1/2 teaspoon dry mustard 1/2 teaspoon mixed dried herbs 1 tablespoon chopped fresh parsley
Bean mix 2 420 ml cans cut green beans ( or use fresh cooked and cooled green beans or butter beans) 2 420 ml cans 3 bean mix Small can of chick peas 1/2 red pepper chopped, use green and yellow as well if you prefer 1 small red or white onion sliced finely
Instructions
Mix dressing ingredients. Place beans into a 2 Litre container ( I use an ice cream container) and pour over dressing, mix a little and cover, leave in fridge for a few hours or over night. Before serving toss beans gently and use slotted spoon to drain off dressing and spoon into a serving bowl. This salad will last for a quite few days in the fridge.
