4 medium-large potatoes –cut into half’s and then into quarters leave skin on. More if you making a lot 3 Shallots finally chopped ½ Spanish onion finally chopped Sliced mushrooms 2 tablespoons garlic paste 2 tablespoons parsley 2 tablespoons chives 2 tablespoons parmesan cheese 1-2 jars of white sauce – any flavour will do Lots of grated cheese
Instructions
Boil the potatoes until very soft be careful not to break them while draining them
In a bowl mix up the shallots, onion, mushrooms garlic, parsley, chives, parmesan, and white sauce stir around and make sure everything is really mix through well.
In a baking dish put a good layer of the potatoes in and poor some of the mixture and mix through and make sure the potatoes are really covered in the sauce, and then pour the rest of the mixture on top.
Really cover the top with the grated cheese
Cook for about 30 mins on 200 then turn down to 150 for 30 mins then to just give the top a bit of extra colour turn back up to 200 for about 10mins.
