Kokanee (Salmon) Nut Pie

Description

This is a recipe passed down from my Canadian family which is so tasty and good for you. Kokanee is the native American Indian word for Salmon.

Ingredients

Topping and Base:
1 1/2 cups plain flour
1/2 ts paprika
1/2 ts onion powder
1/2 ts dill
1/2 cup of butter
1 1/2 cups of grated tasted cheese
1/3 cup silvered almonds

Filling:
1 leek finely chopped
1 ts butter
2 cups of tinned red or pink salmon, drained
3 beaten eggs
1 cup of plain, low fat yoghurt
1/4 low fat mayo

Instructions

Mix all the topping and base ingredients together thoroughly and set aside 1 cup for the topping. Line your pie pan with the remainder.

Saute' chopped leek and butter in a small fry pan. Mix together in a bowl with the rest of the filling ingredients. Pour into pie pan and sprinkle the top with the cup of dry mixture you set aside earlier.

Bake for 35 - 40 minutes @ 175c degrees (350F)

Notes

You can use cottage cheese instead of yoghurt and replace leek with broccoli or cauliflower.
