Description

I've called this dish this because, basically, it's a "throw in what you have" kind of improv meal that either uses up leftovers or is just a nice thing to eat :)
The recipe I'm showing is purely something I did ad hoc and is very, very open to interpretation by you wonderful, adventurous cooks out there!

Ingredients

Essential:
12 eggs (Please do try to use free range but if you just can't, use what you can)
Cream...about 200ml (interestingly, i've used thickened, whipping and long life and all work )
Salt & Pepper to taste
Grated cheese (to taste also but about 60gms- I use a microplane for a finer grate)

Leftover meat of any description and whatever quantity (for this one, I used leftover lamb)
Vegetables of any description (if already cooked, great, if not , give them a bit of a soften in a frypan)
Herbs (try to use fresh if you can but dried will work too)
**Of course, if you don't eat meat.....just don't put it in there :)

Instructions

Pre-heat oven to 200c (You might need to increase or decrease depending on your oven)
Crack eggs into a bowl, add seasoning as desired.
Add cream.
Whisk to combine.
Saute off any veg necessary.
Spray a dish with oil (or grease with butter) - something like a lasagne dish is good.
Add meat and any cooked veg to the dish. (Tepid is ok, piping hot is not)
Finely chop any fresh herbs and add 3/4 to meat & veg and the other 1/4 to the egg (if dried herbs use discretion but about same proportions)
Grind fresh pepper over the meat/veg in dish.
Add egg mixture and gently combine so that the egg mixes through all other ingredients.
Place in the oven for 20 mins.

Remove from oven, add grated cheese and whatever else you want (I like cherry tomatoes halved on the top)
Return to oven and cook until your desired consistency. You don't want it wobbling in the middle.......it just needs to be set. Remember that resting will help.

Once ready, remove from oven and let it rest for about 5-10 mins. Serve as desired with veg, salad or on it's own.

Notes

You could use:
Ham, Salami, Chicken, Chorizo, Bacon
Herbs I used: Mint, basil, parsley, oregano, garlic, onion salt (not technically a herb there)

This makes a great breakfast dish, particularly for a crowd, if you use say; bacon, mushrooms, tomatoes

As you see...It's seriously adaptable.

    Nice idea...will try with less eggs as we are in 2 ...yummy
