4 baked chicken breasts, diced into small chunks 1 1/2 cups cabbage, chopped 1 large carrot, sliced 1 large onion, chopped 2 large celery stalks with leaves, chopped 1-15 oz. can of crushed or diced tomatoes 1-14 oz. can fat-free chicken broth 1 1/2 tsp. salt 1/4 tsp. black pepper
Instructions
Place all ingredients, except chicken, in a large pot and simmer for 45-60 minutes, or until vegetables are soft. Add in chicken and heat thoroughly. Enjoy anytime for meals or snacks, as this is a very healthy, low fat soup.

We're soup lovers, and this is one of our favorites. A great way to get eat your vegetables.

So true Eva, you can really jam pack soups with lots of healthy veges :)
