2 Chicken Breasts 1 Red Capsicum 1 Green Capsicum 1 Purple Onion 1/4 Cup Soy Sauce 2 Tablespoons Seasame Oil 2 Tablespoons Rice Wine Vinegar 1 Tablespoon Grated Ginger 1 Tablespoon Brown Sugar 2 Tablespoons Masterfoods Freshly Chopped Chili 1 Fresh Red or Green Chili 2 Cloves of Garlic, crushed 8 Skewers
Instructions
1. Soak the skewers in water for 20 minutes. 2. Chop chicken into 3cm cubes. Chop the onion and capsicum into bite size squares. 3. To make the marinade, mix the Soy Sauce, Sesame Oil, Rice Wine Vinegar, Brown Sugar, Ginger, Chili, and Garlic until the sugar has dissolved. 4. Thread the Onion, Capsicum and Chicken onto the skewers, alternating as you wish. 5. Put skewers in a baking dish and brush marinade over skewers. 6. Allow to stand in the fridge for at least an hour before cooking, to marinade. 7. Cook in a pan or on the BBQ for 5-10 minutes or until chicken is cooked.
Notes
Zucchini and Cherry Tomatoes work well in lieu of Capsicum.
These are great served with salad if you are having a BBQ or also excellent with rice.
