Black Rice Muffins

make your own black rice flour - wash and dry black rice then grind up in a coffee grinder.

Ingredients

Approx 2.5 cups rice flour
A teaspoon baking powder
sugar - I use about 2 tablespoons - more could be added to your taste.
1 egg
some butter - recipe says 50gms
and approx 200ml coconut milk

Instructions

mix flour baking powder & sugar
add egg, butter and approx 200ml coconut milk

mix in and beat to a batter you can work with

put in muffin tin (small size) and bake for about 20 - 25 min

I usually add black sesame seed powder and black sesame seeds before baking but you can add anything you like!!
